Error Creating Word Documents from Template.

We are getting the "Document engine for template JobQuote is not installed on the server or not working properly." error when trying to create Word Documents from a Template.

I know the quick answer to this: Install Word on the Server

Which is what I will do.

But, I was wondering, is there some other workaround? Can we use Open/Libre Office or some other way besides having to install Word on the Server?

No, there is no other workaround.

Pretty sure (it's been a while since we tried this) you can upload the document in RTF (rich text format) and it works.

We run linux servers and used to generate docs this way, when you download a .rtf on a windows machine it will open in Word so it is ok from the User perspective too.
